Ingredients
- 1 loaf Stonemill Multigrain Rye, cut or torn into ½ inch pieces Ingredients
- 4-5 apples, chopped Ingredients
- 1/2 cup chopped walnuts Ingredients
- 1/4 cup raisins or dried cranberries Ingredients
- 2 tsp ground cinnamon Ingredients
- 1/2 tsp ground nutmeg Ingredients
- 2 cups non-dairy milk Ingredients
- 1 tsp vanilla extract Ingredients
- 8 large eggs Ingredients
- 3-4 tbsp maple syrup Ingredients
- 1/2 cup oats Ingredients
- 3 tbsp coconut sugar Ingredients
- Optional: 1 can of coconut whipping cream Ingredients
Instructions
- Preheat oven to 350C (180F). In a large baking dish, evenly spread bread pieces.
- Top with apples, walnuts and cranberries. Sprinkle with cinnamon and nutmeg. In bowl, combine milk, vanilla and eggs.
- Pour this mixture over top of the ingredients in the baking dish. Drizzle with maple syrup and sprinkle with oats and coconut sugar.
- Bake for 25-30 minutes. Remove from oven. Spoon into dish and top with coconut whipping cream.
- Refrigerate any leftovers and reheat in the oven for 10 minutes before serving.
