Ingredients
- 1 radicchio, chopped Ingredients
- 1-2 hearts romaine lettuce Ingredients
- 1 sweet yellow pepper, chopped Ingredients
- 2 carrots, chopped Ingredients
- 4 tomatoes on the vine, chopped Ingredients
- Half cucumber, chopped Ingredients
- 1 cup cooked chickpeas (drained and rinsed) Ingredients
- 1 can flaked tuna or wild salmon, drained Ingredients
- Juice from 1-2 lemons Ingredients
- 1/3 cup extra-virgin olive oil Ingredients
- Sea salt + pepper to taste Ingredients
Instructions
- Combine salad ingredients including radicchio, romaine, sweet yellow pepper, tomatoes, cucumber and carrots into a large bowl. Toss in chickpeas and tuna.
- In a small bowl, combine lemon juice and olive oil. Pour dressing ingredients over top of salad. Add sea salt and pepper to taste. Enjoy!
- Store any leftovers in the fridge. Keeps for one day.
