Sauce
- 4-6 red ripe tomatoes (depending on size)
- 1 bunch fresh basil
- 1 large clove garlic
- (or 1 Tbs. garlic scape pesto)
- 1/4 cup Extra Virgin Olive Oil
- Sprinkle of sea salt and pepper to taste
Pasta
- Brown Rice pasta (shape of your own choice - I like the small curly ones)
Instructions
- Dice tomatoes into 1/2 inch cubes (approx.), put in bowl.
- Cut fresh basil into small strips and add to tomatoes.
- If using fresh garlic, crush one clove and add it to the tomatoes. If you have the garlic scape pesto, use 1 Tbs.
- Stir in olive oil. Mix it all together, adding the salt and pepper to taste.
- Cook the pasta according to the directions on the bag.
- Drain most of the water from the pasta and mix in the tomato sauce while the pasta is still warm.
- Enjoy!
