Strawberry Spinach & Goat Cheese Salad

I make this salad often and when strawberries are in season, you will find it in restaurants too. It's satisfying because you are getting all 3 macronutrients: complex carbohydrate, good fat and lean protein. It is a rich source of micronutrients: vitamins and minerals. The fiber will keep your colon smiling :)

Serves 2 people


1/2 shallot, finely chopped

2 tablespoons raspberry vinegar

1/4 cup olive oil

Toss the ingredients together in a bowl and set aside.

Salad Ingredients:

Bushel of spinach (adjust according to how many people  you are serving)

6 medium strawberries thinly sliced

1/4 cup walnuts or pecans

1/4 cup of goat cheese


Put spinach, strawberries, nuts and goat cheese into a large bowl and gently toss to combine. Add dressing to taste and toss once more. Serve immediately.
