These oatmeal raisin cookies are naturally gluten-free and nut-free, making it a great option for baking for kids, school snacks, or anyone with allergies. They are lightly sweetened with maple syrup and made with oats, oat flour, and hemp hearts for a boost of fibre and plant-based protein.
- 1½ cups oats
- 1 cup oat flour
- ⅓ cup hemp hearts
- 1 tbsp ground cinnamon
- 1 tsp baking soda
- 1 tsp baking powder
- 2 eggs
- ⅓ cup maple syrup
- ½ cup raisins
- ¼ cup melted coconut oil
Preheat oven to 350°F (180C) and line a baking sheet with parchment paper. In a bowl, mix the oats, oat flour, hemp hearts, cinnamon, baking soda, and baking powder.
In another bowl, whisk together the eggs, maple syrup, and melted coconut oil. Combine the wet and dry ingredients and fold in the raisins.
Scoop onto the baking sheet and gently flatten the cookies. Bake for 10–12 minutes until lightly golden. Let cool and enjoy!
