Dessertsgluten-freeVegetarian
A fudgy, chocolatey brownie with a little nourishing twist! Sweet potato keeps these brownies moist and naturally sweet, while Manitoba Harvest hemp hearts add plant-based protein, healthy fats and minerals.

Ingredients

  • ⅓ cup unsweetened cocoa powder
  • ½ cup almond flour
  • ¼ cup hemp hearts plus more for sprinkling
  • 1 tsp baking powder
  • 2 eggs whisked
  • 1 cup mashed cooked sweet potato
  • ⅓ cup nut butter
  • ⅓ cup pure maple syrup
  • 2 tbsp melted coconut or olive oil
  • 1 tsp vanilla extract
  • ½ cup dark chocolate chips

Instructions

  • Preheat oven to 350°F (180°C) and line an 8x8-inch baking pan with parchment paper.
  • Mix cocoa powder, almond flour, hemp hearts and baking powder in one bowl. In another, combine eggs, sweet potato, nut butter, maple syrup, oil and vanilla.
  • Add the wet ingredients to the dry and stir to combine. Fold in chocolate chips and sprinkle extra hemp hearts on top.
  • Bake for 25-30 minutes, until a fork inserted into the centre comes out clean or with a few moist crumbs. Let cool before slicing.
  • Tip: For extra fudgy brownies, take them out around the 25-minute mark.
