Ingredients
- 4 cups watermelon, cubed
- half a cucumber, chopped
- handful fresh mint, finely chopped
- juice from 2 limes
- 1/4 cup crumbled goat feta
- drizzle of extra-virgin olive oil
Instructions
- Combine in a bowl and enJOY immediately!

Hi Joy! Have NEVER BEFORE added anything to my beloved juicy watermelon; TBH - I wasn't sure if this recipe would work out at our house. And being so unsure of how it would go (with the feta, cucumber and evoo - no way!!!), I didn't even take a picture of the salads before my husband and I ate it yesterday afternoon. Oh my - results: This afternoon, I found myself right back at the watermelon bin getting stuff to make it all over again! We both LOVED it. So simple to make, HYDRATING (as you mentioned), so cooling to get through these oh-SO-hot summer days here in Jersey! Thanks so much for this DELICIOUS recipe AND the video to go with it (since I tend to be a visual learner).
