Celery Blueberry Smoothie

This delicious smoothie is packed with fibre giving it many health benefits from blood sugar balancing to aiding the body in detoxification.

We are in the full swing of smoothie season and I couldn't be happier about it. I've been sharing lots of smoothies on social media to get you on the smoothie train with me. I had no idea this particular smoothie recipe would become such a hit on Instagram so I figured it needed a permanent home here on the blog.

This smoothie is packed with B and C vitamins, and minerals such as potassium, folate, magnesium, healthy fats and its got tons of gut-loving fibre.

Getting enough fibre in your diet is extremely important for whole body health and this smoothie makes it easier to do that!

Celery BLueberry Smoothie

Fibre has many important roles in the body such as the following:

MAKES NUTRIENTS: Fibre feeds the good bacteria which help to manufacture the water-soluble vitamins B1, B2, B3, B6, B5, B7, folate, B12 and C and the fat-soluble vitamins A, D, E and K. These are absorbed in the colon whereas dietary nutrients (these same vitamins we get from food) are absorbed in the small intestine. Thank you microbes and fibre!

DETOXIFIES: Soluble fibre acts like a sponge to absorb toxins and waste products for elimination. Whereas insoluble is the opposite of a sponge and acts like a scrub for your gut by brushing out waste material that is not any benefit to the body.

LOWERS CHOLESTEROL + EXCESS HORMONES: Those sponge like qualities also help to eliminate excess cholesterol and hormones like estrogens. Women with bad PMS or major peri or menopause symptoms often improve dramatically when they got pooping regularly by increasing fibre and therefore optimizing their hormones.

BALANCES BLOOD SUGAR + KEEPS YOU FULLER LONGER + CRAVINGS AWAY: Blood sugar balance is key to feeling your absolute best! Stable energy, good mood, cravings at bay are all a result of eating meals rich in plants and therefore fibre!

Ingredients
  • 3-4 stalks celery
  • 1 cup wild blueberries (frozen works too!)
  • Half a cucumber (skin on)
  • 1 cup spinach or romaine lettuce
  • 2 Medjool dates, pitted
  • 1-2 tbsp almond or sunflower butter for nut free
  • 1-2 tbsp coconut butter (manna) or 2 tbsp unsweetened shredded coconut
  • 4 tbsp hemp hearts
  • Optional: 1 scoop collagen powder
  • Non-dairy milk to desired consistency
Instructions
  1. Place all ingredients into blender. Blitz until creamy. Enjoy right way.

In case you're wondering about the celery juice craze that's been going on the last few years, I recommend this smoothie over celery juice any day from both a taste and nutritional perspective.
