- 1/2 cup cashews Ingredients
- 1 cup fresh basil Ingredients
- 1 garlic clove Ingredients
- 1/2 tsp sea salt Ingredients
- 2 tbsp lemon juice Ingredients
- 1/2 cup olive oil Ingredients
- 227g (8oz) pasta* Ingredients
- 2 cups snap peas Ingredients
Instructions
- Place cashews into a food processor and blend until fine. Add basil, garlic, sea salt, lemon juice and olive oil and blend until creamy.
- Meanwhile, bring a pot of water to a boil and cook pasta according to package instructions. Add snap peas to boiling water for a minute just before draining the pasta to warm them through (if you want).
- Drain pasta + snap peas. Toss with creamy pesto and serve immediately or refrigerate and serve chilled. Top with nutritional yeast or your favourite cheese (I love pecorino!).
