Hello my joyous readers!

Tis the season for winter squash. If you've visited a farmers market or a grocery store in the last few weeks you've likely noticed the variety of squashes. Each having a unique flavour and texture. These are truly a gift from mama earth. Squash has many health benefits from cancer prevention to boosting the immune system and promoting beautiful skin, healthy eyes and more.

Take note of this joyous nutritional fact:

While squash are mostly carbohydrate, it is important to remember they are a complex carb, full of fiber, water dense and very satisfying. In fact, they are a helpful food in the prevention of diabetes as they help to control blood sugar. They are a good source of B-complex vitamins including B1, B3, B6, pantothenic acid, and folate which are all tied to blood sugar regulation. Better blood sugar control means better energy, better mood and less cravings!

On the Morning Show this week I did a segment on healthy boob foods and created this salad on-air. It was so delicious I packed it for lunch!

This was a really quick recipe to put together since I roasted acorn squash on the weekend to make this beautiful and flavourful soup, I had some leftover squash that I simply cut into cubes and mixed with this salad.

Salad
  • 1/2 cooked squash, cubed
  • 2-3 cups, washed and chopped raw kale
  • 1/3 cup pumpkin seeds
  • 1/3 cup dried cranberries
  • 1/4 cup crumbled goat cheese
  • 2 tbsp ground flaxseed
Apple Cider Honey Vinaigrette Dressing
  • 3/4 cup extra-virgin olive oil
  • 1/4 cup apple cider vinegar
  • 2 tbsp filtered water
  • 2 tbsp honey
Instructions
  1. Combine salad ingredients together in a large bowl. In a separate bowl combine salad dressing ingredients and pour over top of salad. Serve immediately or let the salad marinate in the dressing for an hour or two. EnJOY!
