Mushroom Black Bean Burger

Part 1
  • 1 can (15 oz / 425 g) black beans drained and rinsed
  • 2 whole eggs (Veganify-it! 2 tbsp sprouted chia/flax mix, 5 tbsp water. Let sit for a few minutes until it becomes eggy)
Part 2
  • 1/2 onion finely chopped
  • 6 cremini mushrooms chopped
Part 3
  • 1 cup quick oats (or use quinoa flakes)
  • 1/4 cup shelled hemp seeds
  • 1 tsp ground cayenne
  • 1/2 tsp cumin
  • 5 sundried tomatoes, finely chopped
Instructions
  1. Place ingredients from Part 1 into a blender or food processor and combine until a paste.
  2. Sautee ingredients from Part 2 and set aside.
  3. Combine blended ingredients from Part 1 with ingredients from Part 3 in a large bowl.
  4. Mix in the sauteed onions and mushrooms from Part 2
  5. Form into patties and grill approximately 7 minutes each side.
Notes

If mixture is still too wet, add some more hempseeds or quick oats.
