1 1/2 cups of green cabbage shredded with a grater
1 1/2 cups of purple cabbage, shredded with a grater
˝ of a medium sized red onion, diced
Optional: 2 carrots grated
2 tbsp of rice vinegar
1 tbsp balsamic vinegar
1/4 cup extra-virgin olive oil
1 garlic clove, minced
1/2 cup finely chopped fresh mint
Good dose of sea salt and black pepper
Shred the cabbage into a large bowl and mix with onions and carrots. Combine the dressing ingredients into a mason jar and shake well. Pour the dressing onto the slaw and mix. Feel free to add more dressing if it doesn't fully coat everything. Season with sea salt and pepper. Garnish with some parsley, mint or anything edible and green to make it look pretty and appetizing!
