Hello my joyous readers,

I love cookies. In fact, some would say I’m a cookie monster. Years ago I was also a sugar-addict
and my cookie monster habit certainly did not make me very joyous. I would eat too many cookies, feel bloated, fat and gross. I still eat cookies today, but because my diet is very balanced I don’t suffer from sugar cravings and I only eat healthy gourmet cookies these days!

I created these cookies for my Morning Show segment on healthy boob foods last week. They could be eaten raw or cooked, it’s really up to you!

Seed N’ Spice Cookies

Ingredients

  • 1 cup ground almonds
  • 1 banana
  • 5 medjol dates, seeds removed
  • 1 tbsp cinnamon
  • 1 tsp cardamom
  • 1/2 tsp nutmeg
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
Instructions
  1. Preheat oven to 350 degrees. Place all ingredients into a food processor and blend until combined.
  2. Grease cookie sheet or cover with parchment paper.
  3. Form batter into 1 inch balls and press with a fork on to cookie sheet. Bake for 10-11 minutes or until golden brown.
  4. Makes 10-12 cookies.

These cookies are gluten-free, refined-sugar-free, dairy-free and absolutely delicious.

    Hi Miriam. The banana acts as a binder to hold the batter together (and also adds a touch of natural sweetness) so you could try using some applesauce OR a flax/chia egg instead.
