Lately, I’ve been loving Organic Halloumi from Fromagerie L’Ancêtre. It’s one of those ingredients that instantly elevates a meal while requiring very little effort. When cooked, it becomes beautifully golden and crispy on the outside while staying soft and satisfying on the inside.

But first, what is Halloumi?

If you’re new to halloumi, you’re in for a treat. Halloumi is a semi-hard cheese that originated in Cyprus and is unique because it has a high melting point. Unlike most cheeses, it doesn’t melt into a gooey puddle when heated. Instead, it becomes beautifully golden and crispy on the outside while staying soft and slightly chewy on the inside. Its mild, savoury flavour makes it incredibly versatile and perfect for grilling, pan-frying, adding to salads, grain bowls, sandwiches, and of course, these healthy vegetarian tacos. Think of it as a delicious protein-rich ingredient that can easily take centre stage in a meal.

We are big halloumi fans in the McJordan household (see my recipe video!) and these Halloumi Tacos have quickly become a favourite because they’re fresh, flavourful, and come together in less than 20 minutes. The salty (but not too salty) savoury halloumi pairs perfectly with a refreshing avocado-mint slaw, all tucked into warm corn tortillas.

They’re ideal for a quick weeknight dinner, a summer lunch on the patio, or a vegetarian meal that’s both nourishing and satisfying.

Vegetarian Tacos with Halloumi

Ingredient

  • 1 package L'Ancêtre Organic Halloumi, sliced
  • 1 tsp extra virgin olive oil or avocado oil
  • 6 organic corn taco shells
  • 1 avocado, mashed
  • Juice of 1 lime
  • 1 cup green cabbage, shredded
  • 4 tbsp fresh mint, chopped
  • ½ cup cherry or grape tomatoes, chopped
Instructions
  1. In a medium bowl, mash the avocado and stir in the lime juice.
  2. Add the shredded cabbage, fresh mint, and jalapeño if using. Mix until well combined and set aside.
  3. Pat the halloumi slices dry with paper towel to remove excess moisture.
  4. Heat olive oil in a skillet over medium heat. Add the halloumi slices and cook for 2 to 3 minutes until golden brown on the bottom. Flip and cook for another 2 minutes until both sides are crisp and golden.
  5. Warm the corn tortillas in a dry skillet over medium heat for a few minutes on each side.
  6. Assemble the tacos by adding a generous spoonful of avocado mint slaw to each tortilla. Top with halloumi slices and chopped tomatoes, and garnish with extra fresh mint if desired.

The combination of creamy avocado, crisp cabbage, fresh mint, and golden halloumi is absolutely delicious. Every bite of these vegetarian tacos has the perfect balance of crunch, freshness, and savoury flavour.
