I love the simplicity of this salad bowl because it’s packed with veggies and yumminess! There are no leafy greens in this salad and I did that on purpose because I was making this for my daughter, Vienna, and I specifically chose all of her favourite veggies!
This recipe is…
- Packed with gut-friendly fibre
- Rich in vitamin A, C, folate, magnesium, potassium and iron
- Packed with colourful phytonutrients (aka healthy plant compounds to fight disease and keep your immune system healthy )
- Plant-based, gluten-free and dairy-free
- Kid-friendly and picky-eater-approved
- A great make-ahead recipe
I make this salad on weekends because it keeps really well for quick and easy healthy lunches during the week.
Ingredients
- 1 can (398 mL) organic chickpeas
- 1 cup cucumber, chopped
- 1 cup grape or cherry tomatoes, halved
- 1 sweet yellow pepper, chopped
- 1/4 cup fresh herbs (mint, basil, or dill) chopped
- 1/4 cup extra-virgin olive oil
- Juice from 1 lemon
- Pinch of sea or pink salt
- Drain and rinse chickpeas. Set aside.
- In a salad bowl, combine chickpeas, cucumber, tomatoes, yellow pepper and herbs. Pour olive oil and lemon over top. Mix to combine and then sprinkle with a pinch of salt.
- Enjoy immediately, or refrigerate for up to 1 week.
Serves 4-6
I also did a recipe video you can check out here.
important note!
Please make sure you always use organic chickpeas, whether you use dried or canned. Otherwise, they may likely be contaminated with glyphosate, the main ingredient in the common weed killer, Round-Up, which is considered a likely carcinogen (cancer-causing) by the World Health Organization. You likely heard in 2018 there was a report released on popular brands of hummus and their glyphosate levels were shocking!
When I buy hummus, I always buy the organic version of Sunflower Kitchen’ Hummus especially because my daughter is a hummus monster. Alternative, you can make your own hummus with organic chickpeas!

My husband mentioned last that we have 4 cans of chickpeas and asked what the plan was with them. Guess I figured it out haha, thanks!
Perfect!! Enjoy!!
Thank you for sharing the link about the glyphosate levels!!!
No problem! Good info to know, especially if you’re a hummus monster like me 🙂
How do you keep your herbs fresh. I spend a lot of money on fresh herbs but they don’t last long. What’s your secret?
These are some of my son’s favourites too! Can’t wait to try it!! Absolutely going with dill as my herb of choice!! Thanks for sharing.
Glad to hear that! Hope you can join me tomorrow, I’m making it on IG live with my daughter. It will be fun! https://www.instagram.com/p/CALIjnyHZMV/
Cut the bottoms off, and stick them in a mason jar with water and put them in your fridge like fresh cut flowers 🙂
