I made this for Walker because he loves the taste of coffee and combined with chocolate… it is a match made in joyous heaven!
This is the perfect way to start your day. You really feel the difference starting your day with nourishing vitamins and minerals, protein and fat – that is exactly what you’ll get in this pudding. Walker finds he gets a really clean energy from the addition of Greens+ Extra Energy. (Side note: I would totally use it too if I wasn’t breastfeeding Vienna). However, I did sneak a spoonful and it is deeeelish!
And it’s not just in his head…
Greens+ is clinically proven to increase energy and vitality.
In fact, research out of the University of Toronto found that after a few months of daily use not only did participants find their energy levels increased but also mental well-being improved.
As per my usual recipe creation style, I like simple. So, if you’re like me you might appreciate the simplicity of this recipe made with ingredients you probably have in your kitchen already.
Ma McCarthy made it and had it later in the evening and she was up until 2am – yikes! Here’s the recipe.
Ingredients
- 1 can 400 ml organic coconut milk, full fat
- 1/4 cup chia seeds
- 1/2 cup water
- 1/4 cup raw cacao powder
- 1 tbsp greens+ extra energy* (cappuccino flavour)
- 2-4 tbsp real maple syrup
- 1/4 cup strawberries mashed
- 2 tbsp mini chocolate chips
- Shake can of coconut milk before opening. This will help mix up the good fats that may have solidified.
- Combine coconut milk with chia seeds and water in a medium size bowl. Let sit overnight or for a few hours until it becomes pudding-like.
- Mix in raw cacao powder, greens+ extra energy and maple syrup.
- Give it a taste test and you can decide at this point how sweet you want it to be. Add more maple syrup if need be.
- Top with mashed strawberries and mini chocolate chips!
Please note, if you do not use full fat canned coconut milk you will likely get a different consistency so just keep this in mind if you use almond milk or any other kind of milk.
*If you don't have Greens+ extra energy and you still want the cappuccino taste you could mix in 1 shot of decaf espresso.

Hi Valerie, no it’s not. I would suggest adding decaf espresso for the cappuccino flavour instead. You can’t use this product while breastfeeding because of the herbs. This is why I made it for my husband Walker and I only taste tested. I make chia pudding every single week though… so you can follow all the instructions and simply omit the greens+, you’ll have a delicious chocolate pudding!

Love this recipe. I used Garden of life greens and 2 tbsp maple syrup. I plan to make a batch and have it as dessert after lunch! Or 3 pm snack.
