Tacos are the perfect weekday meal for so many reasons, and not just for Taco Tuesday! Namely, they’re a cinch to pull together, delicious and have the ability to be loaded with nourishing ingredients. Plus, kids LOVE tacos (well, they love anything in a tortilla, but especially tacos).
These cauliflower tacos are packed with plant-based goodness from the sprouted tortillas on the outside to the paprika roasted cauliflower and
mango-red pepper salsa on the inside.
When assembling these cauliflower tacos, I wrapped them in Silver Hills’s Sprouted Power spinach tortillas.
If you’re a savvy Joyous Health follower, you may already know about my love for Silver Hills and sprouted whole grains in general.
When choosing whole-grain foods, I opt for sprouted whenever possible, since this makes the wheat much easier to digest and less inflammatory in our system.

I know cauliflower is a unique filling for tacos, but rest assured it’s delicious!! It’s seasoned with paprika, cayenne, sea salt and then roasted to perfection. Veggie tacos are the ideal summer dinner – light, fresh and flavourful. Plus, you’ll only have to turn on your oven for a little bit to roast the cauliflower (or you can try grilling the cauli on your BBQ).
Like its close cruciferous cousins, broccoli and kale, cauliflower boasts plenty of antioxidant, cancer-fighting and heart-healthy properties. It has a ton of fibre, aids in hormonal balance and is jam-packed with folate, which is crucial for women of child-bearing age. It also contains lutein, which encourages eye and artery health and supple skin. And with a recipe this simple and delicious, you’ll be back to the market for more cauliflower.
The mango-red pepper salsa is the most delicious topping – it’s the perfect blend of sweet and spicy and its crunchy texture nicely complements the cauliflower and the avocado sauce.
Speaking of that avocado sauce – it has a nice zippy zing to it thanks to the lime juice and cilantro. If you are not a cilantro fan you can swap in any fresh herb you like such as mint or basil.
Here’s the recipe for Cauliflower Tacos with Mango Red Pepper Salsa!
Mains & Sides
CAULIFLOWER TACOS
- 1 head cauliflower, chopped into bite size pieces
- 1 tsp paprika
- Optional: 1/4 tsp cayenne powder
- 2 tbsp extra virgin olive oil
- 1/2 tsp sea salt
- 4 Silver Hills Organic Spinach Sprouted Tortillas
SALSA
- 1 mango, chopped
- 1 sweet red pepper, chopped
- 1/4 cup tightly packed chopped cilantro
- 1 garlic clove, finely chopped
- Juice from 1 lime
- 1 tbsp extra-virgin olive oil
AVOCADO SAUCE
- 2 ripe avocados, pit removed
- Juice from 2 limes
- 2 tbsp extra-virgin olive oil
- 1-2 tbsp water as needed
- Preheat oven to 350F (180C). Line a baking sheet with parchment paper.
- Place chopped cauliflower into a large bowl and drizzle with extra-virgin olive oil. Sprinkle with cayenne, paprika and sea salt.
- Evenly spread cauliflower on baking sheet. Bake for 20-25 minutes. Be careful the cauliflower doesn't burn.
- For the salsa, in a small bowl combine all the ingredients and mix together. Set aside.
- In a small food processor or blender combine the avocado sauce ingredients. Blend until creamy. Give a taste test, add more liquid as needed for a thinner consistency.
- Once roasted cauliflower is done, you're ready to assemble your tacos!
- Spread a layer of avocado sauce on each tortilla. Followed by 4 to 4 cauliflower florets and topped with mango pepper salsa. Drizzle a little more avocado sauce on top if you like. Enjoy!

They are often in the freezer section of the health food store. I buy them from The Sweet Potato. I’ve seen them elsewhere too!

Health food store has brown rice tortillas. You could also use lettuce as a wrap. There are also gluten-free sprouted wraps by LIVE – if you live in Ontario you can find them at health food stores. Good luck!
Looks great but so hard to find these wraps in Ottawa. Can easily find the bread but wraps are so hard to find !
If you can’t find these exact wraps, any tortilla wrap will do in place for this recipe.
Joy, these Cauliflower Tacos were just out of this world ! The lime juice and the cilantro really stole the show on this recipe. Just loved eating them, bite-by-bite with tender cauliflower bits and a simple salsa and an amazing avocado sauce.
